Copycat Simple Mills Artisan Bread
Do you love Simple Mills gluten free boxed mixes? I do, but don’t always have one on hand or want to pay for the convenience! So, I decided to make something similar from ingredients I had at home! These copycat Simple Mills artisan rolls are the result.

Hamburgers were the reason I tried making these- my mom had successfully made us some hamburger buns using the boxed mix and I wanted to see if I could copy it using what I had on hand. I used a silicon extra large muffin tin to make these 6 “buns”.
Simple Mills Ingredients
The ingredient list from the Simple Mills mix is pretty short: almond flour, arrowroot starch, flax meal, tapioca, baking soda and salt. Then you add your own eggs, apple cider vinegar and olive oil.
My Substitutions
Tapioca – I didn’t have arrowroot starch so I used tapioca starch instead. Sweetener – an outdated site listed coconut sugar as an ingredient, but at only 1 tsp it probably wouldn’t matter if you just omit sweetener of any kind. Coconut Flour – I added coconut flour because the mix was a little too watery when first mixed. Egg whites – after avoiding all eggs for over 30 years, I can now handle egg whites so I used them in this recipe. I plan to play around with an egg free version, since I’ve made other mixes from Simple Mills without eggs.
LEAP Friendly
If you are following your personalized LEAP food list, all these ingredients are tested or usually allowed: almond flour, tapioca starch, coconut flour, salt, baking soda, egg white, any allowed oil, any allowed vinegar. Coconut sugar is considered untested, so use any allowed sweetener such as cane sugar, maple sugar, or just omit.
Copycat Simple Mills Artisan Rolls
This versatile recipe can be made into a loaf, dinner rolls, flatbread or buns!
Ingredients
Dry Ingredients
- 1 1/2 cups fine almond flour
- 1 cup tapioca starch also called tapioca flour
- 1/4 cup ground flax
- 2 tbsp coconut flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp coconut sugar Optional, or use other sweetener
Liquid Ingredients
- 3/4 cup egg whites could also try 3 eggs or egg substitutes
- 1/4 cup apple cider vinegar
- 2 tbsp olive oil
Instructions

Preheat oven to 350 degrees.
Mix and spoon into oversized 6 muffin cups to make hamburger buns. Sprinkle tops with garlic salt if desired.
Bake at 350 degrees for 20-23 minutes. Cool on a rack. -
Tip: Combine dry ingredients and store in a jar for an easy DIY "mix" to use in the future.
Notes: Baking as a loaf, flatbread or smaller muffin/roll will change the baking time needed.

YES!!!!!!! These are perfect!! So delicious! I have been waiting for someone to figure this recipe out! I immediately ran out to get the ingredients, made them into dinner rolls, and ate 4 of them promptly. There is no water in your copy cat recipe whereas the box mix adds water to the mix. Is this an omission. Please explain . Thank you. I’m looking forward to trying this recipe.
Hi Luelinda, sorry for the late response! The recipe works as written — there must be enough moisture in the egg/egg white and apple cider vinegar. Hope it worked for you.
On the simple mills box it has arrowroot. Does your coconut flour substitute that? Can we use arrowroot instead?

Hi Gabrielle. Arrowroot and tapioca are both similar starches and mostly interchangeable in baking. I had tapioca at the time I made this recipe so that’s what I used. Arrowroot would work too, or a combo of the two starches. Coconut flour is not similar (it’s not starchy). I added coconut because the batter it seemed too watery and I needed to absorb more moisture. Some that used regular eggs previously commented that coconut flour was not necessary with whole eggs. Hope that helps.
I notice that the Simple Mills has arrowroot, but you have coconut flour is one better than the other? Are they interchangeable? We just tried the simple mills and loved it, but at $7 for a small loaf. That’s too pricey. So I went looking for a copy cat. Can’t wait to try it.
Hi Brian- sorry for the late response. I didn’t have arrowroot so I used another similar starch in it’s place- tapioca. I only added a tiny bit of coconut flour because my experiment seemed a bit too watery and I wanted to add a bit more substance. Coconut flour is not starchy at all so it can’t be subbed for arrowroot or tapioca, but those two can be subbed for each other. Hope that helps.
Well Yey, I was out of simple mills mixes I thought Maybe I should try and make it myself since we live out in the boonies – the closest I can maybe find a box would be70 miles away. Thought I’d do a search and see if anyone came up with a similar mix. Just found yours. I’m going to pull out my “Sun Oven” – solar oven if it’s sunny and make a batch.

Thanks for figuring these out! It’s been on my to do list for so long. This is the only bread my family eats and we go through at least 4 boxes a week! I made them egg free using Bob’s egg replacer (3 eggs) and added an additional 1/2 cup water to match the Simple Mills instructions. Have you figured out the pancake and waffle mix yet? 🙂

Hi, so if I wanted to add in the arrowroot like simple mills has on the box of ingredients would I use 1/2 a cup of arrowroot and 1/2 a cup of tapioca starch?
Just trying not to screw it up but I do want arrowroot in there as well.

Hi Laura, since tapioca and arrowroot are pretty similar starches, I would say yes I think you could use half arrowroot/ half tapioca for the 1 cup of starch that is needed. Some people just have one or the other starch on hand but since you want to use both, I’d like to know how that mixture works! Thanks!
Great job figuring out the Simple mills mix. I tried the same egg substitution as I did with the mix, and it turned out the same. In place of eggs, I used 3/4 cup water with 2 tsp psyllium husks, then added the vinegar and oil, then let it sit 5 minutes to absorb before adding to the dry ingredients. I used a food processor to mix everything because I wanted to grind the flax meal in the dry ingredients to make it smoother. My family is very happy with my rolls, but we’ve never had the egg version to know how to compare it.
This was delicious! I made it with the 3 eggs and didn’t need to add the coconut flour at all. Thanks for posting this recipe. It’ll be my go to from now on.
Is there a way to make this so the bread is not brown?
Can I use flax meal with water as the egg replacement?
Several have made them egg free. See previous comments:

This is perfect! I tried this tonight, used substitute flax seed “eggs” – 2 Tbsp flax seed meal and 5 Tbsp water. Let it sit for a bit, then mixed in 2 Tbsp water, the 1/4 oil and then the flours, and added 2 Tbsp ACV at the end before baking. I also added a bunch of Trader Joe’s Everything But the Bagel seasoning. I baked it on parchment paper, as 2 flat breads. Perfection! Thank you!
(I figured out the mix was worth 3 cups of flour but I’m glad you saved me the time of trying to play with proportions!) 🙂
